- Bring to a boil 3 cups of water.
- Add 2 generous handfuls of bean sprouts, pre-washed, and 2 tablespoonfuls of fish sauce.
- Let simmer for 4-5 minutes.
- Add 1 chopped spring onion, one finely sliced de-seeded chili pepper and 3 finely sliced garlic cloves.
- Let simmer for another couple of minutes.
- Season with sesame oil and freshly ground black pepper.
- Serve!
